Golden Hour Salad: a Bright, Sweet, Savory Masterpiece!

There’s something about the perfect salad that feels effortless yet elevated, and Golden Hour Salad is just that. It’s a vibrant blend of crisp radicchio, tender spring greens, and juicy green grapes, paired with creamy fresh mozzarella and delicate ribbons of prosciutto. A refreshing clementine dressing ties everything together, while a drizzle of balsamic glaze adds the perfect touch of richness. It’s a salad that’s as beautiful as it is delicious—perfect as a light meal, an elegant appetizer, or a side that steals the show.

Ingredients

Servings: 1 personal salad

  • 1 small head radicchio

  • 1 cup spring lettuce mix (arugula, baby spinach, and red lettuce)

  • ½ cup green grapes, halved

  • 2-3 slices prosciutto (speck works too!)

  • ¼ cup or 3 slices fresh mozzarella

  • 1 clementine

  • Olive oil

  • Fresh cracked black pepper

  • Sea salt

  • Balsamic glaze (Roland Foods Balsamic Vinegar Glaze of Modena from Amazon is my favorite!)

Instructions

  1. Prepare the greens – Separate the leaves from the radicchio and rinse them thoroughly along with the spring mix. Pat dry and place them in a large bowl.

  2. Make the dressing – Juice the clementine into a small jar or glass, then add an equal amount of olive oil (eyeball it to match the liquid level). Crack in some fresh black pepper, add a pinch of sea salt, and whisk vigorously with a fork until fully emulsified. The dressing should appear slightly cloudy and well combined.

  3. Assemble the salad – Pour your desired amount of dressing over the greens and toss gently to coat. Cut the fresh mozzarella into chunks about the same size as the halved grapes and add them to the bowl.

  4. Add the prosciutto – When serving, tear the prosciutto into large, rustic pieces and place them on top of the salad.

  5. Finish with balsamic glaze – Drizzle the salad generously with balsamic glaze for a perfect balance of sweetness and acidity.
